As the summer comes to a close this simple spinach and buttermilk ranch pasta salad hits the spot! My mom would make this for us as kids and the flavors were so fresh and memorable! Serving this was a hit for all the baby showers and events I have made it for over the years! Serve with grilled chicken if you want this as a side dish or serve with breadsticks or my homemade French bread as a main dish and enjoy!
Spinach Pasta Salad
1 lb baby spinach pasta leaves
1 large package of large pasta shells cooked according to directions
1 bunch of green onion sliced
2 red tomatoes chopped (I always add more especially when they're fresh from the garden)
Dill weed to taste (1- 2 tsp)
!/4 cup diced black olives
Salt and pepper to taste
Homemade Buttermilk Ranch Dressing DO NOT use bottled ranch! Just whip up your own with a ranch packet and buttermilk and mayo and this is a game changer!
