Make these any time of the year because they are the PERFECT pumpkin muffins!
Ingredients
1 3/4 cup flour
1 cup granulated sugar
1/2 cup dark brown sugar
1 tsp baking soda
1/2 tsp salt
2 tsp cinnamon
1/4 tsp ground cloves
1/4 tsp ground nutmeg
2 eggs
1 15 oz can libbys pumpkin puree
1/2 cup coconut oil
1 tsp vanilla
1 cup or more mini chocolate chips
Preheat the Oven to 375
Whisk flour, sugars, baking soda, salt and spices. In another bowl whisk eggs, pumpkin, coconut oil and vanilla.
Mix dry and wet ingredients together.
Put in muffin tins and top with more mini chocolate chips. Bake for 20-22 minutes
