In the meantime I take advantage of every opportunity I have to eat Mediterranean food!s
It always tastes so fresh and delicious! I have a good friend who owns an amazing Greek Restaurant where of all places? North Carolina! I swear I went there once a week while I lived there! Rika and her daughter Brandie always welcomed us with a smile and love and care. I associate Greeks with welcome arms (Like the family in My Big Fat Greek Wedding!) I always tease that my family is like Toula's family and my husbands family is like Ians family. Quite the opposites!
This is a fun dish you can serve at your next family gathering!

Recipe
Ingredients
Package of Orzo pasta
1 1/2 cup- 2 cups quartered cucumbers
1 yellow pepper seeded and chopped
1 orange pepper seeded and chopped
1/2 red pepper seeded and chopped
1/2 cup roasted red peppers chopped
1 cup diced tomatoes
2 green onions diced
1/2 cup Kalamata olives sliced
1/2 cup sundried tomatoes packed in oil
1 1/2 cup marinated artichokes quartered
1/2 - 1 cup finely chopped basil
1/2 cup finely chopped Italian parsley
1/2 cup finely chopped
1 cup goat cheese or feta cubed
Ladolemono
1/4 cup freshly squeezed lemon
Zest from one lemon
1 clove fresh garlic
1 tsp oregano
salt and pepper to taste
1/2 cup Extra Virgin Olive Oil (Mandi bought me Melies that is made in Greece!)
Directions
Add lemon juice, zest, garlice, oregano, salt and pepper. Slowly drizzle EVOO into mixture (emulsify) and whisk until blended (I used a "frother" not a "Whisky thing" I kept referring to in my video!)
Prepare orzo as directed on package and set aside. Chop the vegetables and prepare the dressing. Toss orzo with all the vegetables and ladalemono. Top with goat or feta cheese, ,more basil and parsley and serve!
