3,2,1 French Bread and Pizza Dough Recipe
3 Tbsp sugar
2 Tbsp Yeast
1 Tbsp Salt
5 Tbsp (⅓ cup ) butter or ⅓ cup olive oil if making pizza dough
2 ½ cups warm water
(Use the Kristi method- boil half the water in microwave for 2 minutes - with butter ) then add the other half cold water.)
6 ½ - 7 cups flour
Dissolve sugar with hot water and butter in a mixing bowl. Add cold water. Mix and add yeast . Add 3 cups flour, salt then 3. ½ cups more flour scraping down the sides to combine on the second setting of a kitchen aid. Knead for 10 minutes . If more flour is needed add a Tbsp at a time to get the right consistency.
Cover the bowl and set aside to rise for an hour.
Punch down dough and form into a ball. Split in half and roll the dough out to a rectangular shape and then roll again pinching the seams on the bottom. Repeat other side. Spray baking pan with cooking oil and place loaves on pan. Cut 4-5 slits across the top. Let rise another hour.
Preheat oven to 410 degrees. Bake for 20-25 minutes depending on your oven but don’t over bake!
Top with butter across the loaves when out of the oven!
