This is a recipe I created and have been making for over 25 years. Its one of our family favorites and is so full of flavor and delicious.
Ingredients
1 yellow onion finely chopped
3-4 garlic cloves minced
2 Tbsp olive oil
1 1/2 cups green, yellow, orange red peppers sliced (I love doing a variety of colors)
4 boneless chicken breasts seasoned, sauted, cooked and sliced (you could use store-bought rotisserie chicken)
1/4 cup Italian Seasoning
2 cans diced tomato
10 fresh basil leaves
1//4 cup brown sugar
1 can chicken broth
1 can prego or spaghetti sauce of your choice (prego is sweet that's why I like this one for this particular dish)
1 cup grated parmesan
1/2 cup freshly grated mozzerella cheese
To Prepare
Heat oil in a large stock pot. Saute onions until translucent add garlic and peppers and saute for 2 minutes.
In a blender combine diced tomato with fresh basil. Pour mixture over vegetables. Add Italian seasoning. (Remember what I always quote from the movie Hundred Foot Journey- "If you have a spice, spoon it in, don't sprinkle it in!")
Add 1 can of chicken broth. Simmer on low for an hour or longer. Add mozzarella and parmesan and simmer another 15 min making sure to not scorch the sauce.
Serve over pasta of your choice.
