Deliciously Moist Parmesan Crusted Chicken

Seriously this is the easiest, most deliciously MOIST chicken you'll ever taste! It's foolproof every time as well! This was a super quick and easy go-to recipe and my sweet Lindsay was the one who always seemed to make this dish for the family when it was her turn to cook! I even have her cute little original handwritten recipe still in my recipe book from when she was in grade school. I honestly don't know where we found this recipe originally but I have doubled the original recipe because the topping is what makes it so yummy, I make my own bread crumbs from my leftover homemade French bread instead of store bought Italian bread crumbs (but both are delicious!)


It takes longer to preheat the oven then to whip the ingredients together!

Ingredients

4-6 boneless chicken breasts thawed, rinsed and patted dry

1 cup mayonnaise

1/2 cup grated parmesan cheese

2 Tbsp Italian seasoning

1/2 cup bread crumbs

or 1/2 cup store bought Italian breadcrumbs

To prepare:

Preheat the oven to 425

In a 9x 13 pan add chicken that has been rinsed and dried (this makes the topping stick better)

In a mixing bowl combine mayo, cheese, breadcrumbs and Italian seasoning (or store bought breadcrumbs)

Spread evenly on top of chicken.

Bake at 425 for 20 minutes or until cooked thoroughly

Serve with mashed potatoes, roasted carrots and a green salad!
